Gin and tonic cucumber with sea herbs, trout roe and dressed Brixham crab
Creamed duck egg, confit yolk gel, pancetta jam and wild garlic
Jacka Bakery’s award winning sourdough
Marmite and cep butter

Braised oxtail, haricot blanc veloute, leek powder and puffed wild grains
Pan roasted, boudin blanc, celeriac and chicken juices
Rump, shoulder, confit shallot, cockles and jus roti
Devon Blue, mille-feuille (Optional supplement £8)
Panna cotta, lemon balm, and wild fennel
Salted caramel parfait, dulce aero, coffee mousse and textures of hazelnut
